Production Methods: Organic farming with as less as possible human intervention. No chemical use. Night harvest that allows keeping the grape at cold temperature, pneumatic pressing, vinification under controlled temperatures. Fermentation for the Baroque variety. Gros-Manseng and Sauvignon are aged on the lees.
