Production Methods: Consultant Thomas Duclos oenologue. Hand harvests. Traditional production methods. Fermentation for one month, with frequent pumping over for the extraction of tannins and aromas. Ageing in temperature-controlled vats with a third in French oak barrels for 15 months. Fining with egg whites. Light filtration by drawing off.

Special Features: Old family vineyard established in the 17th century. Controlled natural sodding, limited yields, selection by parcel, natural grass grown between rows, hand harvested. Integrated production (sustainable farming, environmentally friendly).
