Production Methods: Consultant Thomas Duclos oenologue. Traditional production methods. Fermentation for one month, with frequent pumping over for the extraction of tannins and aromas. Ageing in temperature-controlled vats with a third in French oak barrels for 15 months. Fining with egg whites. Light filtration by drawing off.
Special Features: Chateau Pavillon Rocher has been in the family since the 17th Century. Controlled natural sodding, limited yields, organic certified viticulture, selection parcellaire, natural grass in between rows, hand harvested.

Nose: Expressive, ripe black cherry, blackberry and pink peppercorns.
Palate: Extremely well structured, good concentration of red berry fruits with a slightly touch of smoke in the finish and smooth tannin well integrated.
Length/Finish: Smooth red berries fruits, tannin well integrated with elegant spices finish.
