Production Methods: Highly restricted yields. Selection of the fruit, using partially whole grape bunches. Traditional vinification. No use of sulphur dioxide during fermentation. Left to soak at 8°C for 6 days and after that wild yeast is allowed to develop and ferment the wine. Spend 20 days in wooden vats at 30 °C with regular punching down of the caps and running over juice. 18 months aged in a single 285L barrel made from Troncais oak.

Palate: Racy, a wine full of complexity, great structure, fruity with gooseberry, strawberry and blackberry notes as well as fruit pits and liquorice.
