Production Methods: Hand-harvested grapes. Destemmed grapes ferment in stainless steel with daily pump-overs and extended maceration for richness and colour. Aged 21–36 months in French and American oak, with racking every six months. Post-blending, the wine matures further in concrete tanks in the estate’s underground cellar, enhancing structure and quality.
Special Features: Crafted from estate-grown grapes harvested at optimal ripeness The winery, Led by Maite, sixth-generation winemaker of the Quiroga de Pablo family. Historic cellar, hand-carved 8–10 metres underground and supported by ashlar stone arches. Dating back several centuries, this cellar remains in active use today for both vinification and maturation.
