Production Methods: Hand-harvested grapes. Fermented in stainless steel with daily pump-overs and extended maceration for depth and colour. Aged 12–18 months in French and American oak, with racking every six months. After blending, the wine matures further in concrete tanks in the estate’s underground cellar, enhancing quality and complexity.
Special Features: Crafted from estate-grown grapes harvested at optimal ripeness The winery, Led by Maite, sixth-generation winemaker of the Quiroga de Pablo family. Historic cellar, hand-carved 8–10 metres underground and supported by ashlar stone arches. Dating back several centuries, this cellar remains in active use today for both vinification and maturation.
