Production Methods: Cold maceration with the skins for 12-24 hours, gentle pressing, settling, and fermentation in stainless steel tanks at a controlled temperature for approximately two weeks.
Special Features: Crafted from estate-grown grapes harvested at optimal ripeness The winery, Led by Maite, sixth-generation winemaker of the Quiroga de Pablo family. Historic cellar, hand-carved 8–10 metres underground and supported by ashlar stone arches. Dating back several centuries, this cellar remains in active use today for both vinification and maturation.
