Production Methods: Manually harvested, the full grape is put in vat for a 100% carbonic maceration. We leave the grape in vat for 17 days at a temperature of 19°C. After the pressing the wine is aged in barrels for 10 months. No addition of sulphites before bottling.
Special Features: The Cuvée Thaddeus is a single-parcel wine from the Corcelette vineyard. Owned by the Bodillard's Family for several generations. Transferred from generation to generation through a deep respect and commitment to the cultivation traditions. Cultivated entirely by hand, due to steep slopes; vines bush-trained in goblet form
