Production Methods: All the work on the vines, including the harvest and triage is carried out by hand. Minimum human intervention and respect of the lunar cycle. Using no chemical weed killers and tilling the soil to preserve the natural biodiversity. Using natural yeast. Vinification and maturation in oak barrels to keep all the flavour of the terroir. No stirring of the lees in the barrel. Natural second Fermentation in oak – usually in July. No SO2 used at all. Clarification with only one racking. No filtration.
Special Features: The vineyard is in altitude. Only 0.5 hectares producing exceptionally low yields – only 1,200 bottles produced each year.

Palate: Fresh and elegant on the attack, with rich, concentrated flavours of ripe yellow fruit and acacia, complemented by a subtle nutty character
