Production Methods: Vinified as Champagne 1 year “sur latte” and 1 year in limestone cellar. Riddling by hand. Hand harvest at full ripeness. Use of pneumatic press and slow fermentation to get the best from the grape. Liqueur dosage at 1.4g.
Special Features: All the work on the vines is carried out by hand, including the harvest, using conservation cultivation. Expression of a specific terroir. Each grape is vinified separately.
