Production Methods: Traditional methods of production are used in the winery: Fermentation is carried out with natural yeast under temperature-controlled tanks with a 30-day maceration period. Once the vinification is completed, 40% of the wine is aged for 12 months in French oak barrels.
Special Features: The vineyards in Vistalba are well-situated, benefiting from altitude and cool nights which help preserve acidity and aromatics. Sustainable farming with 4,000 vines per hectare and low yields of 45 hl/ha. Harvesting is performed manually, and the grapes are transported in small 20kg trays to the cellar in order not to damage them. Pressing is exclusively performed by a hydraulic press.
