Production Methods: Cold maceration is carried out at 10ºC – 12ºC for 5 days prior to fermentation which takes place at a controlled temperature of 28 – 30°C. 4 pump-overs per day followed by a long maceration of 30 days. 60% of the wine is aged in French oak barrels for 12 months.
Special Features: Low-yield old-plot, located on the northern bank of the Black River. Deleafing and green picking is carried out in December. 45 hectolitres per hectare. Harvest is realised manually in small trays of 20kg in order not to damage the grapes. Double selection is performed: first by selection of bunches and a second selection by grape.
