Production Methods: Pneumatic press, temperature-controlled fermentation. The must is left to ferment until all the sugar has turned into alcohol, which means there is no residual sugar left in the wine to preserve the true flavour of the terroir. The wine matures on lees in stainless steel tanks. No oak. Malolactic fermentation. No filtration before bottling.
Special Features: Three parcels in two distinct areas. Two are on the éboulis of the Solutré rock, the other surrounded by the vines of Pouilly Fuissé. No chemical fertilizers have been used since 1991. No pesticides. All the work including harvest is done by hand. Chemical fertilizer-free vineyard.
