Production Methods: Grapes are selected before harvesting and laid on mats in airy locations to start the withering process and promoting sugar concentration. After withering, the stalks are separated and the grapes pressed. The must is then put in 70-100 litre chestnut kegs, which contain very old, selected yeasts, that are controlled every year. 3 years maturation in 70-100 litre chestnut kegs.
Special Features: Vineyard is at 230-240m above sea level, aged for 3 years in chestnut casks.
