Production Methods: Traditional vinification. Pre-fermentation with cold maceration for 8 days. Natural yeasts. Pumping over performed. Temperature controlled fermentation tanks for 20 days with a maximum of 30 degrees temperature control. French oak barrels from Bertranges forest. Half with new oak and half with 2 year old oak barrels for 16 months.
Special Features: Fifth generation wine makers. Vines on slopes. Traditional viniculture with minimal intervention. No chemicals used. Hand harvest with selection both in the field and on the sorting tables.
