Production Methods: The grapes are de-stemmed and immediately soft pressed in pneumatic presses and separated from the skins. Selected yeasts are added to start fermentation quickly. Fermentation is temperature controlled at 17-18C for 15 days. Once the fermentation is complete, the wine is racked, and then kept on its fine lees until the end of January. Malolactic is not carried out in order to retain optimum acidity and freshness. The wine is constantly kept at a maximum of 15°C in order to retain freshness.
