Production Methods: Organic and biodynamic farming. Grass grown between the rows. Natural calcium is added as well as active wildlife management including introduction of bird and bat boxes to help control insect population naturally. Picking off and green harvest for optimal sun management. Late harvest by hand with selection of grapes, direct cold pressing with no skin contact, slow fermentation in sandstone amphoras. Natural yeast. Aged for six months in French oak barrels, no clarification and no filtration.
