Production Methods: Grapes are hand harvested and only the best are selected on tables. They are destemmed before gentle pressing and they are carried to the tanks in small crates. The must is cooled to 5°C. Use of natural yeast. The fermentation is not triggered. The must undergoes a natural clarification since all the suspended lees becomes sediment. After 24 hours the must is decanted and fermentation take place at 12 - 14 degrees C. Malolactic fermentation is carried out. No oak. Bottling after light filtration.
Special Features: Espalier system of cultivation. Cooling effect created by the Adriatic sea breezes. Traditional ancestral farming with respect of the land and environment with no chemicals used.
