Maison Marchand has been making fine Burgundy wine since 1813. Focused mainly on the Cotes de Nuits, across the villages of Chambolle-Musigny, Morey-Saint-Denis and Gevrey-Chambertin, JP Marchand works sustainably, with a focus on soil quality to nurture his vines which range between 40 and 60 years old.
Each parcel is harvested and vinified separately. All harvests are carried about by hand with further selection on sorting tables. Traditional, natural methods are used including “Le ouillage” – the periodic refilling of oak barrels to compensate for the natural evaporation know as the share of the angels and to avoid surface contact with air. He also continues to use the old methods of racking where wines are drawn off to eliminate deposits or lees and obtain an beautifully clear wine.
The clearness and brillance are further enhanced by “Le collage” with clay for white wines and by filtration on soil for red wines.
