Soil: Heterogeneous soils; predominantly composed of sand, gravel and abundant pebbles. Certain sectors contain calcareous and clay-rich components mixed with gravel and larger stones.
Production Methods: Produced from a selection of centenary pre-phylloxera vineyards and younger trellised Verdejo vineyards. The old-vine component is fermented and aged in French oak barrels and foudres, while the trellised vineyards are vinified in stainless steel tanks to preserve varietal purity and freshness. Following fermentation, both components remain on their fine lees for approximately eight months, either in oak vessels or stainless-steel tanks, with regular monitoring and tasting throughout the ageing period. Once the desired balance between complexity, texture and freshness has been achieved, the different components are blended and harmonized before undergoing gentle clarification and filtration prior to bottling. Approximately 8 months on fine lees, partially in French oak barrels and foudres and partially in stainless steel tanks.

Nose: Pure and expressive, with aromas of pear, green apple and white peach, complemented by subtle notes of fresh fennel, dried herbs and delicate hints of toast and pastry derived from lees ageing
Palate: Elegant and textured, combining freshness with depth and complexity. Well-balanced between varietal purity, creamy lees-derived texture and vibrant acidity
Length/Finish: Long, savoury and persistent, with a fresh, saline finish and subtle notes of fennel and orchard fruit
