Production Methods: The plantings comprising 21 rows of Shiraz, 3.9 acres from 1891 and another 5.4 acres of Shiraz were planted in 1894, and all are still producing premium fruit. Grapes are hand-harvested from dry-grown vines, some dating back to 1891. After destemming, the must undergoes maceration for 10–12 days to extract colour and tannins. The wine is then gently fined with egg whites and minimally filtered to preserve its character. Aging occurs in French oak barrels to enhance complexity and structure.

Nose: Violet, ripe plums, black olive with spice and mint with a hint of blackberry
Palate: Ripe plums and blackcurrants with lovely grainy, almost chewy tannins
