Production Methods: Grapes harvested at optimal ripeness then quickly led to the press where the extraction of the must is done slowly and gently (pneumatic press).The juice is then put in a thermo-regulated vat in order to constantly monitor and control a fermentation at low temperature (14 to 16 degrees). This type of long fermentation preserves the maximum aromas. After maturing on fine lees, each cuvée is assembled with care to obtain an excellent quality and homogeneity of all the production.
Special Features: The vineyard is established on hills and well directed, exposed and protected hillsides which the soils are diversified particularly well and called according to their pedological characteristic. Wine-growing tradition passed down in the family of winegrowers for more than four centuries, 13th generation.
