Soil: Deep layers of silt and clay

Production Methods: Hand harvested and de-stemmed, cold soaked 6-10 days, followed by alcoholic fermentation with predominantly wild yeasts. Long “post-fermentation” maceration for up to 40 days. Wine then pressed and put into barrels to mature and undergo natural malolactic fermentation.

Special Features: Extensive crop thinning to gain optimal ripeness. Four different clones of Pinot Noir (Dijon clones from Burgundy), with varous rootstocks (Riparia Gloire, 101-14 and Schwarzmann). West side of the vineyard. Terroir adjacent to Cloudy Bay.

Tasting Notes

Colour: Deep ruby

Nose: Lovely aromas of ripe black cherries and wild violets.

Palate: Soft and smooth structure, intensely flavoured with sweet cherries, cedarwood and savoury characters of dried herbs, and wild game.

Length/Finish: Mineral lingering finish.

Alcohol: 13%
