Production Methods: Yielding of 30 hl/ha. Plot selection (Selection parcellaire) de-leafing and green harvest. Manual harvest in small 20 Kg trays. Cold maceration is carried out at 10°C-12°C for 5 days prior to fermentation 30 days with indigenous yeast only with four pumping a day at 29° C to preserve the optimum expression of the “terroir”. 4 pump-overs per day and a long maceration period of 20 days at 25°C . 100% Aged in French oak barrels for 16 months.
Special Features: Only 12 000 bottles produced each year. Every bottle is numbered. 1,200 meters above sea level.
