Production Methods: Soft pressing. Cold settling. Selected natural yeast. Fermentation for 20 days in stainless steel with a partial malolactic fermentation. Wine ageing 7 months in steel tank on lies. After fermentation aged 26 months on lees. After disgorgement aged 4 months minimum in bottle. Dosage is 2,1 g/l.

Special Features: Cultivated in Guyot with a plant density of 4,000 vines per hectare and a yield of 55 hectolitres per hectare. Low human intervention, avoiding chemical treatments. Hand harvests take place in mid-September with grapes in full maturity with a good balance of acidity with further sorting on tables.
