Production Methods: The grapes undergo destemming and light crushing, followed by fermentation at a controlled temperature (~25 °C) with skin maceration lasting 15-20 days. Half the wine spends 8 months in 25-hectolitre Slavonian oak barrels, a quarter in steel and a quarter in amphoras.
Special Features: At Villa Bibbiani, the grapes are rigorously harvested by hand, in small boxes of 15kg each. After a careful manual selection, they are transferred to the fermentation tanks, always by hand and taking advantage of the architecture of the winery and therefore the force of gravity.
