Production Methods: Grapes are destemmed, pressed and settled. Fermentation: Free run juice inoculated with selected wine yeast, 14 days at 13°C. After fermentation, the wine is racked and kept on fine lees for 2 months. Wine fined, filtered, cold stabilized and bottled.
Special Features: Descending into the Wellington valley, rich organic oakleaf topsoil in the foothills gives way to shale and alluvial deposits on the valley floor creating the perfect terroir for our Chenin blanc.
