Production Methods: Three generations of traditional and ancestral methods. The grapes are gently crushed using a roller that preserves the berries, they are then conveyed through large pumps in a modern soft press which separates the juice from the skins and seeds.The must is then left to ferment at a controlled temperature of 15/18 °C which keeps perfumes and fruit flavours intact. The fermented wine is then decanted and separated from the lees before finally bottling.
