Production Methods: Under the supervision of consultant Gilles Pauquet, the oenologist for Chateau Cheval Blanc. Traditional production methods. Fermentation for one month, with frequent pumping over for the extraction of tannins and aromas. Ageing in temperature-controlled vats with a third in French oak barrels for 12 months. Fining with egg whites. Light filtration by drawing off.
Special Features: Chateau has been in the family since the 17th Century on the board of St Emilion Grand Cru terroir at the foot of the appellation. Exposition East / South-East. Controlled natural sodding, limited yields, sustainable viticulture, selection parcellaire, hand harvested.
