Production Methods: Grapes are destemmed and inoculated with selected wine natural yeast for fermentation. Fermentation: takes place over 8 days at 26°C. After fermentation, the wine is pressed, and malolactic fermentation completed. 80% aged in 3rd year French MT oak barrels for 12 months, 20% in steel tanks, then an additional 4 months in steel tanks before bottling. Wine is fined, filtered, cold stabilised and bottled.

Special Features: Our cabernet grapes are carefully selected from the mountain slopes, where weathered granite and sandstone soils, with a high clay content, good acidity and water retention predominate.
