Laurent Dufouleur has a family history of winemaking going back centuries, the 17 hectares of vines at the heart of Mercury include 5 premiers Crus that were part of a regeneration programme started 10 years ago to increase the quality of the soil and the surrounds and to introduce sustainable measures for the future. With a firm belief that good wine comes from good grapes, they have invested heavily in ensuring that the 40 year old vines are meticulously cared for and that yields are perfectly ripe before harvest.
